Traditional jam-making relies on the sweetness and gelatinous texture provided by white sugar. However, this recipe ingeniously utilizes the water-absorbing property of chia seeds to achieve a gel-like texture. Brilliant! A small amount of maple syrup is used for flavoring, and you can adjust the quantity to your taste.

Ingredients

  • Fresh strawberries/frozen strawberries: 250g
  • Water: 1 tablespoon
  • Chia seeds: 1.5 tablespoons
  • Maple syrup/honey/sugar: 2 tablespoons

Instructions

  1. In a pot, combine strawberries, maple syrup, and one tablespoon of water. Bring to a boil and then simmer over low heat.
  2. During the simmering process, press the strawberries to help them become pulpy, but not overly mushy.
  3. When the strawberries are soft but not fully mashed, add chia seeds. Continue to simmer for 2 minutes over low heat, then turn off the heat and let it cool (during this time, chia seeds will absorb water and expand).
  4. Once the jam has cooled, transfer it into sterilized jars, and store it in the refrigerator.

Tips

  • This quick recipe takes about 20 minutes and works well with various fruits.
  • Adjust the amount of water used during jam making based on the natural water content of the fruit.
  • Ensure the jam jars are sterilized before use, and store the jam in the refrigerator. It can be kept for 7-10 days.
