Gingerbread from Germany

In times when transportation was not well developed, ginger was an expensive spice that relied on imports. Therefore, only during major winter festivals like Saint Nicholas Day, German godparents would distribute gingerbread (Lebkuchen) with warming properties to everyone.

Now, with improved transportation, restrictions have eased, allowing everyone to make gingerbread.


Ingredients:

  • 5 grams of ginger powder
  • 350 grams of all-purpose flour
  • 2 grams of baking soda
  • 40 grams of milk
  • Honey (quantity as needed)
  • 50 grams of brown sugar
  • 2 grams of cinnamon powder
  • 1 egg
  • Decorative icing or sugar granules
  • Shaped molds

Instructions:

  1. Mix melted butter, brown sugar, and powdered sugar until well combined. Add honey, beaten egg, and milk, stirring until evenly mixed.
  2. Sift together all-purpose flour, baking soda, ginger powder, and cinnamon powder. Add the dry ingredients to the mixture from step 1, and stir until just combined. Avoid overmixing.
  3. Once the mixture is well combined, wrap it in plastic wrap and refrigerate for about 20 minutes to allow it to firm up.
  4. Roll out the chilled dough to a thickness of 3 millimeters. Use shaped molds to cut out gingerbread shapes. Preheat the oven to 175 degrees Celsius and bake the cookies on the middle rack for approximately 15 minutes.
  5. Allow the cookies to cool, then decorate them with icing or sugar granules.
