Highlights of the Recipe
Traditional jam-making relies on the sweetness and gelatinous texture provided by white sugar. However, this recipe ingeniously utilizes the water-absorbing property of chia seeds to achieve a gel-like texture. Brilliant! A small amount of maple syrup is used for flavoring, and you can adjust the quantity to your taste.
Ingredients
- Fresh strawberries/frozen strawberries: 250g
- Water: 1 tablespoon
- Chia seeds: 1.5 tablespoons
- Maple syrup/honey/sugar: 2 tablespoons
Instructions
- In a pot, combine strawberries, maple syrup, and one tablespoon of water. Bring to a boil and then simmer over low heat.
- During the simmering process, press the strawberries to help them become pulpy, but not overly mushy.
- When the strawberries are soft but not fully mashed, add chia seeds. Continue to simmer for 2 minutes over low heat, then turn off the heat and let it cool (during this time, chia seeds will absorb water and expand).
- Once the jam has cooled, transfer it into sterilized jars, and store it in the refrigerator.
Tips
- This quick recipe takes about 20 minutes and works well with various fruits.
- Adjust the amount of water used during jam making based on the natural water content of the fruit.
- Ensure the jam jars are sterilized before use, and store the jam in the refrigerator. It can be kept for 7-10 days.
